Smashed potatoes with grated mixed cheese.
Stab a few potatoes a few times, stick on a plate. And cover with some kitchen roll for ten minutes.
Have the oven on at 200c preheating in the mean time.
Take the potatoes out the microwave, if a sharp knife runs smoothly through it, they are done.
Stick potatoes on a try and hit with a little force to break them open but not pulverised.
Spray with oil or brush with melted butter and lightly salt.
Place in the oven for 15-20 minutes to crisp up then sprinkle grated cheese over and cook for another five minutes or so then serve.
