Pistachios used to come mainly from Iran, where they originated. The red was to hide blemishes that made the nuts look unappealing. When California’s pistachio industry took off we improved harvesting and processing, eliminating blemishes and producing the beautiful nuts we enjoy today. Like these my client gave me this morning.
