I finally made it. My mothers chicken enchiladas, but even the red sauce and mexican rice I made from scratch. She used El Paso enchilada sauce and Mahatma spanish rice. Lots of sodium... probably contributed to her demise :\
Which is why I keep off of fast food and cook at home. Might not be the healthiest but I kick added salt to the curb, but loaded with flavor :)
The enchiladas is filled with chicken with sauteed onions and corn. With mexican rice with red enchilada sauce inside and out. Topped with mexican blend cheese, sour cream, and black olives.
It’s damn good, cant even tell there is no salt. Other than whats in the tortillas, etc.
