So, what did you have/make for dinner?

As I mentioned in IM’s thread, I was planning to make pollo asado, which I turned into tacos with homemade salsa verde and the typical onion & cilantro salsa.

Finished tacos. Salsa verde is not pictured because it must be applied immediately prior to taco consumption. Yes, they’re on a paper plate to approximate the family backyard barbecue experience, and because I’m ghetto like that.

Salsa verde. Just roast tomatillos (peel the paper off first), jalapeño (stem, peel after roasting, and seed), and onion. Add these and some fresh cilantro to a food processor and run on low until all the large chunks are gone. If too bitter, add small amounts of sugar and mix until it is neutralized.
